The wine: Head Over Heels Riesling
Ingredients
- 3 pounds chicken wings, patted dry
- 1 tablespoon baking powder (not baking soda)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ⅓ cup honey
- 2 tablespoons hot sauce
- 2 tablespoons butter
- ½ teaspoon red pepper flakes
- Squeeze of fresh lime
Directions
- Preheat the oven to 425°F. Line a baking sheet with foil and set a wire rack on top.
- Toss the wings with the baking powder, salt, garlic powder, and paprika. Arrange on the rack in a single layer.
- Bake for 45 to 50 minutes, flipping halfway, until crispy and golden.
- Meanwhile, warm the honey, hot sauce, butter, and red pepper flakes in a small pot until the butter melts. Stir in the lime.
- Toss the hot wings in the sauce and serve right away.
